Soft, sweet, easy to love. Mexico is grown by smallholder farmers in Chiapas and Oaxaca, washed and dried with care, and it drinks like a warm conversation with someone who just sat down at your table. There's chocolate in it, and cinnamon, and the faintest green apple snap on the finish. Forgiving enough for the busy brewer, interesting enough to keep around for guests.
